Baked Peach Oatmeal

Moist and delicious, this spiced oatmeal is a crowd pleaser - not your typical oatmeal!

Makes 6-8 side servings.

Add some scrambled eggs and fresh fruit and you've got an easy breakfast or brunch ready to go. (Leftovers make a great dessert with vanilla ice cream!)

Baked Peach Oatmeal


  • 2 eggs

  • ½ cup butter, melted

  • 1-½ cups milk

  • 1 tsp vanilla

  • ½ cup brown sugar

  • ½ tsp salt

  • 1 tsp cinnamon

  • ⅛ tsp nutmeg

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 2 cups old-fashioned oats

  • 2 - 15 oz. cans peaches in light syrup, drained


  1. Preheat oven to 350 F. Spray a 9x9 baking dish with cooking spray.

  2. In mixing bowl, beat eggs. Add butter, milk, vanilla, sugar and mix well. Add salt, cinnamon, nutmeg, baking powder, and baking soda and mix well. Stir in oats. Fold in peaches.

  3. Transfer to baking dish and bake for 45-50 minutes or until slightly browned on top.

Serve with or without milk.
